La Primavera sta finendo e mi sono resa conto che ancora non avevo postato una ricetta con uno degli ortaggi tipici del periodo, gli asparagi!
Questa che vi propongo è una semplice pasta condita con una crema agli asparagi davvero deliziosa e delicata; io ho utilizzato come trafila di pasta i fusilli ma sono ottime anche le penne!
Lo scorso anno avevo postato una serie di ricette a base di asparagi come questo deliziosissimo Strudel , il Risotto e la crema di asparagi di Julia Child ... tutte davvero da provare e rifare!
INGREDIENTI
400 g fusilli
1 mazzetto di asparagi
2 scalogni tritati
100 ml di panna
2 cucchiai di olio extravergine d'oliva
sale e pepe
Pulire gli asparagi, eliminando la parte terminale più dura, lavarli e tagliarli a pezzi, lasciando intera qualche punta e lessarli 5-6 minuti in acqua salata.
Far appassire gli scalogni tritati in un tegame con l'olio, poi unire gli asparagi a pezzetti e rosolarli per qualche minuto.
Aggiungere un po' d'acqua e insaporire con il sale e una macinata di pepe. Cuocere a tegame coperto per 15 minuti.
A questo punto togliere gli asparagi dal fuoco e frullarli. Versare il passato ottenuto in padella, unire la panna, e cuocerlo fino a fare ridurre la salsa.
Dopo aver lessato la pasta, scolarla e aggiungerla alla salsa.
Servire calda e guarnita con le punte di asparagi tenute da parte.
